RAW VANILLA BEAN PROTEIN CHEESECAKES

Servings: 10 Slices
Ingredients:

Base
1 cup Walnuts
1⁄2 cup Desiccated Unsweetened Coconut
6 Medjool Dates, pitted & roughly chopped
2 tbsp Water
1 tsp Cinnamon
Pinch of Salt

Filling
2 cups Macadamia Nuts
1⁄2 cup Pure Vanilla Bean Protein Powder
400ml Coconut Cream
1⁄4 cup Extra Virgin Coconut Oil
1⁄4 cup Maple Syrup

To serve:
Seasonal Fruit & Yoghurt/Cream

Method:
1. Blend all base ingredients until combined.
2. Press evenly into muffins tins (silicone moulds work well)
3. Freeze for 15 minutes.
4. Blend all filling ingredients into a smooth consistency.
5. Pour over base.
6. Freeze until firm (approximately 2 hours).
7. Remove at least 10 minutes prior to serving.
8. Serve with seasonal fruit and a dollop of cream.
