MIXED BERRY & CHOC PROTEIN TART
Servings: 8
Ingredients:
21⁄2 cups Frozen Mixed Berries
2 Free-Range Eggs
1⁄2 cup Almond Flour
2/3 cup Unsweetened Plant Based Milk (I used Coconut Milk)
1/3 cup Coconut Oil, melted
1/3 cup Sugar (I used Rapadura)
1/3 cup Organic Artisan Cocoa Protein Powder
1 tbsp Cacao Powder
1 tsp Vanilla Extract
1 tsp Baking Powder
1/8 tsp Salt
Fresh Berries, for topping
Method:
1. Preheat oven to 180 degrees fan forced.
2. Add berries to a baking dish (I used a pie dish).
3. Add remaining ingredients to blender and blitz until combined.
4. Pour mixture evenly over berries.
5. Bake for 40-55 minutes or until lightly browned.
6. Top with berries and serve warm or cool. Best kept refridgerated.
